Don't throw out those pumpkin seeds! Part of the fun of Halloween is eating the fresh warm toasted pumpkin seeds when you're done carving jack-o-lanterns. Celebrate this fun festive food with a few ways to spice up plain pumpkin seeds.

Vegan pumpkin seed pesto
Use your leftover Halloween pumpkin seeds to make an elegant vegan pesto. Serve your pumpkin seed pesto on crackers or toss with pasta for a vegan pumpkin seed pesto pasta. Want to get meta? Brush your pumpkin seed pesto on fresh chunks of pumpkin and roast them in the oven until tender. Delicious! You might also want to try this pumpkin seed granola or this gourmet pumpkin seed crusted "chicken".

Gourmet pumpkin seed crusted cutlets

Gourmet vegetarian chicken cutlets with sage,pumpkin seed and breadcrumb crust. I haven't yet tried this recipe with tofu or seitan instead of the store-bought vegetarian chicken, but it should be just as amazing. 


Fall brown rice and wild rice with pumpkin seeds

A healthy rice pilaf recipe made with a base of either brown rice or a brown and wild rice blend, lots of flavorful celery, onions and mushrooms and seasoned with savory fall herbs including rosemary and thyme. Add in some oven-roasted squash or pumpkin, and this vegetarian and vegan pilaf recipe would make a great fall or Thanksgiving entree.
